SHOFANG Singapore 26 sp.

Like mostly how the winemaking journey ends up, after 6 years of study and work in Australia, in 2019 Shofang came back to her hometown, Qinhuangdao, and stepped into the new chapter. However, by the time she came back, she got Levi on her side.

Shofang work with the local fruits, not only the grapes. We take over the old vineyards and put new training on. We also source the grapes from other premium regions. And all we have done is to make wines we love to drink and share.

Hand-harvested, 15% of the whole bunches were placed in open-top fermentation tanks and fermented with wild yeast for 20 days. 30% of the oak barrels were two-year-old, with the remainder being barrels aged five years or more; the wine was aged in barrels for 14 months and was neither filtered nor clarified.

Collecting Notes: A return to a light and sweet profile; asking for a sweet treat wouldn’t be out of place – trick or treat!

Tasting: The sweetness of liquorice sweets, strawberries and a hint of candy. On the palate, notes of cherry, raspberry and a touch of jam, with a sweet oak finish.

Qipaopao Muscat Sparkling Wine

Vintage: 2025

Variety: 100% Muscat Hamburg

Alcohol: 5.0% vol

Type: Sweet sparkling wine with 30–40 g/L residual sugar

Origin: Fengjiashan, Qinhuangdao, Hebei

The Rose-scented grapes are harvested early to achieve lower sugar levels (alcohol content) and higher natural acidity. After harvesting, the grapes are destemmed and crushed, followed by two days of cold maceration. They are then pressed, and the juice undergoes flotation. Fermentation takes place at low temperatures in pressure tanks, during which the bubbles form. Once fermentation is complete, the wine is clarified, filtered and pasteurised before being bottled.

A cheongsam or a bubbly? In the end, we went for the pun – and why not? Both are delightful and joyful.

Tasting notes: Aromas of rose water, white peach and pear; on the palate, melon, guava and abundant bubbles. Refreshing acidity and moderate sweetness.
